Am I the only one who thinks of Billy Madison anytime they hear the word Sloppy Joe? I hope not! Well, we do like them shloppy over here! Sloppy Joes are one our favorite week night meals because it's one of the easiest things to make from scratch! If you're vegan, skip the Worcestershire sauce and replace the beef with crumbled tofu. This recipe is kid approved (at least in my house) and perfect for sneaking in veggies! Even better, this is more delicious leftover and perfect for an easy lunch. Even better again (it just keeps getting better and better), I'm willing to bet you have most, it not all, of these ingredients on hand already! Let's find out!
