If you have never had Mississippi Pot Roast, stop everything you're doing and make this. This was life changing for me! It's so tender and unique in flavor compared to any traditional pot roast I have ever had. The ranch seasoning mix and peperoncinis are incredibly complimentary and savory. We serve this with mashed potatoes but you can serve this any way you want! In fact, you can even serve this as a sandwich. I use a crockpot for my roast but you can do this in a large pot and conventional oven. Follow the steps accordingly and set your oven to 300 degrees F for 6 hours or 200 degrees F for 8 hours. Simple, easy, and delicious, add this to your weekly dinner rotation. You may never go back to traditional pot roast again!

Ingredients
  • 2-3 lb chuck roast
  • 2 tbsp ranch seasoning mix
  • 1/2 cup beef broth
  • 1 tbsp garlic powder
  • 1 tbsp dried parsley
  • 1 tsp onion powder
  • 1tsp cornstarch
  • 1 tsp dijon mustard
  • 6 peperoncinis
Directions
  • Step 1 Trim the chuck roast as desired.
  • Step 2 Place the chuck roast and peperoncinis in a crockpot.
  • Step 3 In a small bowl, mix the remaining ingredients.
  • Step 4 Pour the mixture over the roast.
  • Step 5 Set crockpot on high for 6 hours or low for 8.
  • Step 6 Once cooked, shred and serve.
