Sausage and Potato Skillet

If you're looking for a quick and easy dinner, this Sausage and Potato Skillet is for you! This recipe is my go-to recipe when its' been a long day and I truly do not feel like cooking anything! However, as easy as this is, the flavor is not lacking in any way! Smoked sausage with potatoes, onions, and bell peppers. If that doesn't scream simple comfort food, I don't know what does! The only thing that makes this recipe even better is how flexible it is. You can add any seasonal vegetable you have on hand and use water in place of chicken stock. Ingredients
- 2 bell peppers
- 1 small red onion
- 2 russet potatoes diced
- 1 12oz package of smoked beef sausage sliced
- 1 tsp Italian seasoning
- 3/4 tsp paprika
- 1 1/2 tsp garlic powder
- 1/2 cup chicken stock
- 1 tbsp avocado oil
Directions
- Step 1 In a large skillet with high sides, heat avocado oil over medium heat.
- Step 2 Once hot, add onion, bell peppers and potatoes. Cook 5 minutes.
- Step 3 After 5 minutes, add the remaining ingredients.
- Step 4 Cook 20 minutes covered. Stir occasionally.
- Step 5 After 20 minutes, let rest for 5 minutes and serve.
