Everyone loves a good Sweet Potato Casserole and even if you don't, I bet you'll like this one. I can't tell you how many anti-sweet potato family members fight over this casserole every year! Unlike a traditional crumble topping with nuts, we add salty pretzels. It's a major game changer! However, if you like the nuts on top, substitute 1 cup crushed pecans in place of the pretzels. I promise this recipe will not disappoint your family. Enjoy!

Ingredients
  • 2 large sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1 stick of butter
  • 1 tsp vanilla
  • 1 tsp milk
  • 1 cup crushed pretzels
  • 1 cup brown sugar
  • 1/2 cup + 2 tsp flour
Directions
  • Step 1 Preheat oven to 350 degrees F.
  • Step 2 Peel and cut the sweet potatoes into bite size pieces.
  • Step 3 Boil the potatoes in a large pot of water until the potatoes are almost done. Somewhere in between raw and fork tender.
  • Step 4 Once finished, drain and set aside.
  • Step 5 In a large bowl, mix sugar, eggs, 2 tsp flour, 1/2 stick of melted butter, salt, vanilla and milk.
  • Step 6 Once thoroughly mixed, add potatoes and mix to coat evenly.
  • Step 7 Transfer potatoes into a greased casserole dish.
  • Step 8 For the topping, mix pretzels, brown sugar, 1/2 stick of melted butter and 1/2 cup flour.
  • Step 9 Once combined, sprinkle over the top of the potatoes.
  • Step 10 Bake in preheated oven uncovered for 35 minutes.
