It's pumpkin everything season and we are very excited to share with you this Pumpkin Spice Baked Oatmeal. As if this were not good enough on its own, we top the oatmeal with nuts, seeds, and a pumpkin chocolate chip glaze. It's a major crowd pleaser and certain to win over any little ones. Ingredients
  • 2 cups extra thick rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp cloves
  • 1/2 tsp cinnamon
  • 1 1/4 cup unsweetened vanilla almond milk
  • 1/2 cup pure maple syrup
  • 1/2 15oz can pumpkin puree
  • 2 eggs
  • 1/2 cup Lily's Pumpkin Spice Flavored Chocolate Chips
  • 2 tbsp heavy whipping cream
  • 1 tbsp butter
  • 1/4 cup crushed walnuts
  • 1/4 cup pumpkin seeds
Directions
  • Step 1 Preheat oven to 350 degrees F.
  • Step 2 In a bowl, mix oats, baking powder, salt, pumpkin pie spice, cloves and cinnamon.
  • Step 3 In a separate bowl, thoroughly whisk almond milk, maple syrup, pumpkin puree, and eggs.
  • Step 4 Combine the wet and dry ingredients. Mix thoroughly.
  • Step 5 Pour into a greased 9X9 baking dish.
  • Step 6 Bake for 35-40 minutes or until the center is firm. Once finished, allow to cool for 10 minutes.
  • Step 7 While cooling, combine chocolate chips, heavy cream and butter into a microwave safe dish.
  • Step 8 Microwave the chocolate chip mixture in 10 second intervals, mixing after each interval.
  • Step 9 Once fully melted, top the oatmeal with walnuts, seeds and chocolate glaze.
  • Step 10 Serve warm.
