With soft baby red potatoes and a delicious creamy sauce, this Potato Salad is always the talk of the party. In our home, we never have leftovers of this one! We use real mayonnaise and freshly chopped dill, which makes this salad everything you want. Now, we are usually all about adaptability but today is not that day. We do NOT suggest using miracle whip for this recipe (or any other recipe). Just trust us on this one! Perfect for grill outs or potluck, this Potato Salad is a major crowd pleaser. Especially served with our Spicy BBQ Baked Beans (linked below) to complete your side dish menu. Anyways, enough talking and more cooking. Let's get this party going.

Ingredients
  • 1 lb baby red potatoes
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 4 tbsp freshly chopped dill
  • 1/2 small red onion finely diced
  • 1 stalk celery finely diced
  • 3 hard boiled eggs chopped
  • salt and pepper to taste
Directions
  • Step 1 In a large pot, bring water and potatoes to a boil.
  • Step 2 Cook potatoes until fork tender. (Do not over cook or the texture will be off.)
  • Step 3 Once cooked, remove the potatoes from the water and set aside to cool.
  • Step 4 In a separate bowl, mix the remaining ingredients. Make sure to check for salt.
  • Step 5 Once potatoes are cooled, cut them into bite size pieces and fold them into the mayonnaise mixture.
  • Step 6 Refrigerate until cold or over night.

  • Best potato salad ever! They key is to chop the hard boiled eggs only a little bit so that there are big pieces of them!
