Pot Roast

As soon as the leaves turn orange, it's Pot Roast season in my mind! Pot Roast is a simple, healthy and delicious dinner idea. This classic feast will not only feed a crowd, it also makes perfect leftovers the next day. Just toss everything into your crockpot, go to work, and come home to a perfect meal. For this type of Pot Roast, we like to use a bone-in chuck roast. The bone really does deliver a ton of flavor but boneless will work as well. As with anything, adapt to your liking. Enjoy!
Ingredients
- 3-4lb chuck roast
- 3 large russet potatoes largely diced
- 1 large onion quartered
- 3 large carrots roughly chopped
- 3 stalks of celery chopped small
- 2 tbsp minced garlic
- 3 bay leaves
- 2 sprigs of rosemary
- 6-7 sprigs of thyme
- 3 cups of beef stock
- 1 tbsp tomato paste
- 1 tbsp dijon mustard
- 2 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
- 1 1/2 tbsp Auntie Nono's Everything (or garlic and herb seasoning)
- 2 tbsp cornstarch
- 2 tbsp cold water
- salt to taste
Directions
- Step 1 Place all ingredients into a crockpot except cornstarch and water. Set to low for 8 hours.
- Step 2 After 7 hours, mix cornstarch and water. Pour over the roast and stir. Let cook 1 hour.
- Step 3 Serve warm. Roast should pull apart effortlessly.
