Oatmeal Bites
Full of protein, healthy fats, and fiber, these Oatmeal Bites are perfect for breakfast or even a snack! I love having a batch of these in my refrigerator at all times to ensure I have something healthy to grab in between meals. What I love most about these powerful little bites is that you can add or omit whatever you like. Have food allergies? No problem! Love dried cherries? Add them in! Prefer sunflower butter? Use it! You can have so much fun with the recipe. As a bonus, this specific recipe is low FODMAP, which is great for those with gut issues. I really could just go on and on about these! Ingredients
- 2 cups thick cut rolled oats
- 3/4 cup unsweetened peanut butter
- 1/4 cup maple syrup
- 1 tbsp chia seeds
- 1 tbsp hulled hemp seed hearts
- 1/2 cup Lily's vegan stevia sweetened chocolate chips (variety of your choice)
- 1/4 cup roughly chopped raw walnuts
- 1/4 cup unsweetened coconut flakes
Directions
- Step 1 In a large bowl, add all of your ingredients.
- Step 2 Mix thoroughly until everything is coated in the peanut butter. If your mixture is too dry, you can add more peanut butter.
- Step 3 Once mixed, roll your mixture into bite sized balls. Wetting your hands before rolling can prevent the mixture from sticking.
- Step 4 To keep fresh, place these in an air tight container in the refrigerator.
