Miso Glazed Salmon Stir Fry

Everyone loves a good stir fry but everyone deserves this Miso Glazed Salmon Stir Fry! Salmon bites seared to perfection and then tossed in a decadent miso glaze. This recipe is going to have your family begging for more! As always, this recipe is very adaptable. Other things you could add in include mushrooms, snow peas, water chestnuts, or ginger. I love the lighter texture of quinoa with the salmon here but feel free to use rice. I am beyond excited to share this one with you, so I'm going to stop here. Ingredients
- 1 1/2 cup cooked quinoa
- 1 cup diced carrots
- 1/2 cup chopped broccoli
- 1/4 cup water
- 1/2 green bell pepper sliced
- 1 tbsp tamari soy sauce
- 3 tsp coconut aminos
- 1/2 tsp sesame oil
- 2 salmon filets cut into bite sized pieces
- 1 tbsp miso paste
- 1/2 tsp chili paste
- 1/2 tsp rice vinegar
- 1 tbsp finely diced chives
- 4 tbsp olive oil
- salt to taste
Directions
- Step 1 In a skillet over medium heat, add 2 tbsp of olive oil.
- Step 2 Once hot, add carrots, bell pepper, and broccoli. Salt to taste.
- Step 3 Cook vegetables for 3-4 minutes or until starting to brown.
- Step 4 After 3-4 minutes, turn the heat to low and add 1/4 cup of water. Simmer vegetables until the water is evaporated and vegetables are softened.
- Step 5 After water is evaporated, add quinoa, soy sauce, 1 tsp coconut aminos, chives, and sesame oil.
- Step 6 Toss to coat evenly and set aside.
- Step 7 In a separate skillet over medium/high heat, add 2 tbsp of olive oil.
- Step 8 Once hot, add salmon. Salt to taste.
- Step 9 Cook salmon bites 3-4 minutes per side or until browned.
- Step 10 Meanwhile, in a small bowl mix miso paste, 2 tsp coconut aminos, chili paste and rice vinegar.
- Step 11 Once the salmon is finished, pour the miso glaze over and toss to coat evenly. Cook 1-2 minutes.
- Step 12 Serve miso salmon over quinoa stir fry.
