Macadamia Nut Crusted Mahi Mahi

If you're looking for a light but delicious dinner, this Macadamia Nut Crusted Mahi Mahi is for you. Served over a lemon and dill whipped feta that will send your taste buds on a memorable journey! I think you'll be surprised at how easy this dinner is to throw together!
Ingredients
- 8 oz block of feta
- 4 oz cream cheese
- 1/2 cup heavy cream
- 1 tsp fresh dill
- 2 small lemons juiced and zested
- 1/2 tbsp minced garlic
- 4 6-8oz filet of Mahi Mahi
- 1/2 cup panko bread crumbs
- 1/2 cup macadamia nuts
- 1/2 tbsp garlic powder
- 3/4 tbsp dill
- 3 tsp salt divided
- 1/4 cup Avocado oil
Directions
- Step 1 In a mixing bowl, add the feta, cream cheese, and heavy cream. Mix using a hand mixer until smooth and creamy.
- Step 2 Once creamy, add minced garlic, lemon juice and zest, dill, and 1/2 tsp salt. Mix until well incorporated. Set aside.
- Step 3 In a closed zip lock bag, crush macadamia nuts until finely crumbled. * A meat tenderizer works well for this.
- Step 4 On a shallow plate, mix crumbled nuts, bread crumbs, 1 tsp salt, garlic powder, and dill weed.
- Step 5 Salt the mahi filets with remaining salt. Dredge each filet in the bread mixture. Make sure to press the breading into the fish filet.
- Step 6 In a large skillet over medium/high heat, add avocado oil.
- Step 7 Once hot, add the fish.
- Step 8 Cook fish for about 5 minutes on each side or until browned.
- Step 9 Turn heat to low and cook fish 4-5 minutes per side or until the internal temperature reaches 140 degrees F.
- Step 10 Let rest for 2-3 minutes.
- Step 11 Serve over a large spoonful of whipped feta.
