Loaded Nacho Casserole

Everyone loves loaded nachos but have you ever had a Loaded Nacho Casserole? If not, you are in for a surprise! The ingredient list is similar to a typical nacho recipe but strategically assembling and baking them brings on a whole new world of flavor. Being completely adaptable, this recipe is a good one to get creative with! Enjoy yourself with trying new toppings, sauces, or even use rice instead of chips! The possibilities are truly endless. Perfect for a potluck or easy weeknight meal, I promise you'll be going back for seconds!
Ingredients
- 16oz can refried beans
- 1 lb lean ground beef
- 1 1.1oz packet taco seasoning
- 3/4 cup water
- 1/2 cup diced yellow onion
- 1/4 cup diced tomatoes
- 2 tbsp sliced olives
- 4 cups tortilla chips
- 2 cups shredded cheese
- 1 cup spinach chopped
- 15.25 oz can of corn -drained
- 15oz can of black beans -drained and rinsed
- Mexican Crema
Directions
- Step 1 Preheat oven to 375 degree F.
- Step 2 In a 11X7 casserole dish, spread the refried beans evenly across the bottom. * No need to grease the pan first.
- Step 3 Next, add the corn and black beans.
- Step 4 In a hot skillet, brown and drain the ground beef.
- Step 5 Add taco seasoning and 3/4 cup water to the beef. Simmer 2-3 minutes or until thickened.
- Step 6 After 2-3 minutes, spread taco meat evenly over the corn and bean layer.
- Step 7 Bake in the oven for 15 minutes.
- Step 8 While the casserole is baking, place the tortilla chips into a zip locked bag and roughly crush them.
- Step 9 After 15 minutes, remove the casserole from the oven and add an even layer of chips over the beef.
- Step 10 Next, sprinkle the shredded cheese over the chips. Bake for 5-10 minutes or until the cheese is fully melted.
- Step 11 Once finished, remove from the oven and let cool for 5 minutes.
- Step 12 Add diced onion, tomatoes, olives, and spinach on top. Add a drizzle of Mexican crema and serve immediately.
