Whenever it's summer time, my husband and I love to make these Grilled Grouper Tacos. Really, anything grilled goes but these are extra summery! Grouper is a white fish that's mild in flavor and chunky when flaked. That texture is what makes this fish perfect for fish tacos! We personally love grouper when we can find it but any white fish will work. We keep this simple by using our favorite rub called Chub Rub Spicy. Use whatever cajun style seasoning you have! Paired with a cilantro lime slaw, homemade pico and spicy Mexican crema, these tacos are fresh, light and bound to hit the spot! Fire up those grills and lets go.

Ingredients
  • 1 lb grouper filets (or any white fish)
  • 6 street soft tacos
  • 2-3 tbsp chub rub seasoning
  • 2 cups pre-cut slaw mix
  • 4 limes-divided
  • 1/4 cup freshly chopped cilantro
  • 1/2 cup Mexican crema
  • 2 tbsp sriracha
  • 1/4tsp cumin
  • 1/4tsp garlic powder
  • 1 cup diced cherry tomatoes
  • 1/4 cup diced red onion
  • 1 jalapeno diced -seeds removed
Directions
  • Step 1 Heat the grill to medium/high.
  • Step 2 Season fish liberally on both sides with cajun seasoning.
  • Step 3 In a bowl add slaw mix, 2 limes juiced, half the cilantro and salt to taste. Massage the lime juice into the slaw and place in the refrigerator.
  • Step 4 In a separate bowl, mix crema, 1 lime juiced, sriracha, cumin, and garlic powder. Place in refrigerator.
  • Step 5 Again, in a separate bowl, mix diced tomatoes, red onion, jalapeño, 1 lime juiced, and half the cilantro. Salt to taste. Place in refrigerator.
  • Step 6 Place grouper on the grill and cook 5 minutes on each side or until around 145 degree F.
  • Step 7 Once the fish is finished, transfer to a cutting board and let rest for 2-3 min.
  • Step 8 Remove crema, pico, and slaw from the refrigerator.
  • Step 9 After 2-3 minutes, flake the fish into bite size pieces.
  • Step 10 Assemble tacos with fish, slaw mix, pico and crema.
