If you're new to the garlic scape world, hold onto your britches because I'm about to blow your mind! I recently visited a local farm called Thistlehair Farm and they just so happen to grow an abundance of garlic. While there, they allowed me to taste a garlic scape fresh out of the field! If you're anything like me, garlic is your love language. I instantly fell in love and my kitchen is now packed with these for gnawing on, cooking with, and looking at! Thistlehair Farm very kindly blessed me with this delicious, addicting, and very easy Garlic Scape Pesto recipe. This is perfect for toast, pasta, pizza, or simply on it's own. Ingredients
  • 1 cup garlic scapes-chopped
  • 1/4 cup almonds
  • 1/4-1/2 cup avocado oil
  • 1.1 oz asiago cheese
  • .7 oz parmesan cheese
  • 1/2 lemon juiced
  • salt to taste
Directions
  • Step 1 In a food processor or blender, add the almonds and cheese. Process until its a powder consistency.
  • Step 2 Add garlic scapes and continue to process.
  • Step 3 While the scapes are processing, slowly add oil in small increments. This may take between 1/4 and 1/2 cup of oil.
  • Step 4 Once your desired consistency is met, add lemon juice and salt to taste.
  • Step 5 Transfer to an airtight container and refrigerate up to 5 days.
