Eggplant Lasagna

If you're not an eggplant fan, you're about to be! This Eggplant Lasagna is an amazing way to use your end of summer harvest and introduces those comfort fall flavors we are all craving. The ingredient list may look long but this is simple and fast to prepare. We hope your family will love this recipe as much as we do!
Ingredients
- 1 lb ground Italian sausage
- 1/4 tsp fennel seed
- 1 tsp herbs de Provence
- 1 tbsp minced garlic
- 3/4 tsp salt -divided
- 2 cups tomato sauce
- 1 large eggplant or two medium
- 16 oz ricotta
- 1/4 cup freshly chopped basil
- 1 1/2 tbsp freshly chopped parsley
- 1 cup shredded gruyere cheese
- 1 8oz ball fresh mozzarella- sliced thinly
Directions
- Step 1 Preheat oven to 425 degrees F.
- Step 2 In a large skillet over medium heat, brown and crumble the ground sausage.
- Step 3 Once the sausage is finished, drain excess grease.
- Step 4 Next, add fennel seed, herbs de Provence, minced garlic, 1/2 tsp salt, and tomato sauce to the sausage.
- Step 5 Simmer for 10 minutes.
- Step 6 Meanwhile, using a knife, slice the eggplant lengthwise into 1/4 inch slices. Set aside.
- Step 7 In a small bowl, mix ricotta, basil, 1/4 tsp salt, and parsley.
- Step 8 Once the tomato sauce is finished cooking, ladle 1/4 cup of sauce onto the bottom of a 9 X 13 casserole dish.
- Step 9 Add 1 layer of eggplant (about 4-5 pieces) on top of the sauce.
- Step 10 In the following order add 1/3 of the ricotta mixture, 1/3 of the tomato sauce, and 1/3 of the gruyere cheese. This is your first layer. Add another layer of eggplant to start the next layer.
- Step 11 Repeat this order until three full layers are complete. The last layer should end with gruyere cheese.
- Step 12 Once complete, add thin slices of mozzarella cheese to the top of the dish.
- Step 13 Bake in the oven for 40-45 minutes. If the cheese is browning too quickly, cover the dish with aluminum foil after 35 minutes.
- Step 14 After 40-45 minutes, let cool for 10 minutes and serve.
