Soups are not just for cold weather months. This Easy Hamburger Soup puts all of your fresh summer veggies to good use. Of course, you can sub in your favorite fall varieties as well, but for this recipe we are using our first harvest of the year. Beef, zucchini, corn, and spices, our Hamburger Soup recipe is filling and nutritious. You can feel good about feeding this to your family and enjoy the seasonal flavors in a savory way.
Ingredients
- 1 lb 90/10 ground beef
- 1 small zucchini diced
- 2 ears of corn- cut off the cob
- 1 small onion diced
- 1 large tomato diced
- 1 large russet potato diced
- 3 cups beef stock
- 1 tbsp garlic powder
- 1 tsp thyme
- 1 tsp onion powder
- 1/4 tsp sage
- 1/2 tsp crushed red pepper
- 1 tsp Worcestershire sauce
- 1 tbsp A1 sauce
- Salt and pepper to taste
- Topping: Shredded english cheddar cheese (optional)
- 1 tbsp olive oil
Directions
- Step 1 In a large stock pot or dutch oven, heat olive oil over medium heat.
- Step 2 Once hot and shimmering, add onion. Cook until translucent.
- Step 3 Add ground beef. Cook until fully brown and crumbled.
- Step 4 Add remaining ingredients. Simmer over medium heat for 30 minutes. Check the tenderness of the potatoes and adjust cooking time if needed.
- Step 5 Once done, check for salt and serve. Top with shredded cheddar cheese.
