Crockpot Chicken Tortilla Soup can be comforting, festive or whatever you want it to be. It's delicious and that's enough reason to cook it year round! The ingredient list looks long but it's super simple, affordable, adaptable, and filling. We love to use leftover chicken from last nights dinner or a rotisserie chicken already cooked. Your family will be going back for seconds with this one! Throw it all together, set it and forget it.
Ingredients
- 1 lb cooked and shredded chicken
- 2 cans of corn drained
- 2 cans of black beans drained
- 1 can chili ready tomatoes
- 3/4 jar of a 15.5oz jar salsa
- 3 tbsp hot taco sauce
- 1 1/2 cup heavy cream
- 32oz chicken broth
- 1 cup shredded cheese
- 1 jalapeño diced
- 1/4 cup taco seasoning
- 2 tbsp chili powder
- 1 tbsp cumin
- 3 tbsp dried minced garlic
- 3 tbsp dried minced onion
- 2 tbsp oregano
- 1 tbsp cayenne
- 3 tbsp fresh minced cilantro
Directions
- Step 1 Add all ingredients into the crockpot.
- Step 2 Cook on low for 8 hours or high for 6.
- Step 3 Add toppings: sour cream, fresh jalapeño, shredded cheese, and tortilla strips.
