Whether you need an easy weeknight dinner or a feast for a crowd on the weekend, our Classic Beef Stew is sure to please your family. Like all crockpot meals, this dinner is minimal work and takes care of itself. Growing up my mother would serve this with a piece of buttered bread and I still do that to this day. You just simply butter a piece of bread and dip in the stew juices. I'm not sure how common that is but I highly suggest it! Regardless, I know you'll love this one!

Ingredients
  • 1.5 lb stew meat
  • 1 large onion cut into large chunks
  • 3 large carrots roughly chopped
  • 2 celery stalks roughly chopped
  • 1 tbsp minced garlic
  • 1 tsp paprika
  • 1 tbsp Worcestershire sauce
  • 1 1/2 tbsp tamari sauce
  • 2 large russet potatoes diced
  • 1 cup frozen peas
  • 2 sprigs of rosemary
  • 3-4 sprigs of thyme
  • 3 bay leaves
  • 1 cup tomato sauce
  • salt and pepper
  • 3 cups beef stock
  • 2 tbsp cornstarch
  • 2 tbsp cold water
Directions
  • Step 1 Using butchers twine, tie the rosemary and thyme together. This step is optional but allows for easy removal when finished.
  • Step 2 Place all ingredients, except cornstarch and water, into a large crockpot. Turn the heat on low for 7-8 hours or high for 6.
  • Step 3 Thirty minutes before the stew is finished, create a slurry by stirring the cornstarch and cold water together. Pour into the stew and cook for the remaining 30 minutes.
  • Step 4 Once finished, remove the herbs and bay leaves. Serve warm.
