I promise once you try this Breakfast Hash with Homemade Picante Sauce, you will be forever changed. That is a bold statement but truly this picante sauce makes this hash addicting! Potatoes, peppers and eggs with a blistered shishito pepper sauce. What is not to love about that?! Grab your skillets and lets make breakfast our new favorite meal!

Ingredients
  • 3 cups diced potoates
  • 8 oz shishito peppers
  • 1 pound of bacon
  • 1 red bell pepper diced
  • 1 tbsp garlic infused oil (or regular oil)
  • 1/2 tsp ancho chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 tsp diced chives
  • 3-4 eggs
  • 1 cup fire roasted tomatoes
  • 1 lime juiced
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1/4 cup fresh cilantro
  • 1 1/2 tsp salt
  • 1 tsp vinegar
Directions
  • Step 1 In a large skillet over medium/high heat, add shishito peppers, garlic infused oil and a pinch of salt. Cook peppers until blistered.
  • Step 2 Once finished, remove peppers and set aside.
  • Step 3 Using the same skillet over medium heat, brown and crumble the bacon.
  • Step 4 Once bacon is finished, transfer to a plate lined with paper towels. Remove all bacon grease from the pan except 1 tbsp.
  • Step 5 Add potatoes into the skillet and pan fry until browned and cooked through.
  • Step 6 Once potatoes are fork tender, add bell pepper and cook 5 minutes.
  • Step 7 Add 1 tsp salt, ancho chili powder, smoked paprika, and garlic powder. Toss to coat evenly.
  • Step 8 Crack the eggs over the top of the hash and cover with a lid. Cook about 3-4 minutes or until the eggs are cooked to your liking.
  • Step 9 While the eggs are cooking, place the tomatoes, lime juice, 1 1/2 cup blistered shishito peppers (stems removed), cumin, cayenne, cilantro, 1/2 tsp salt, and 1 tsp vinegar into a food processor or blender.
  • Step 10 Blend until smooth and set aside.
  • Step 11 Once eggs are finished, place the remaining shishito peppers on the hash. Sprinkle chives over the top.
  • Step 12 Serve hash with shishito picante sauce.
