Breakfast Casserole

I don't know about your family but mine isn't super keen on breakfast. However, that changes when I'm making Breakfast Casserole! My son refuses to eat eggs but he devours this every time. You can follow this recipe or use whatever veggies you already have on hand. This casserole is truly whatever you want it to be! Perfect for a Sunday brunch or weeknight dinner, our Breakfast Casserole is sure to be a major hit! Let us know what you think in the comment section below!
Ingredients
- 11 eggs
- 3 cups frozen shredded hash browns
- 16oz Tennessee Pride Sage Country Sausage
- 1/2 cup green bell pepper diced
- 1/2 small yellow onion diced
- 1/2 cup milk
- 1 tsp fennel
- 1/2 tsp oregano
- 1/2 cup shredded cheddar cheese
- 1 1/2 tsp salt
- 4oz diced green chilis
Directions
- Step 1 Preheat oven to 400 degrees F.
- Step 2 In a large bowl, whisk eggs and milk together.
- Step 3 In a skillet over medium heat, cook and crumble the sausage. Once cooked through, drain the sausage on a plate with paper towels.
- Step 4 Add the sausage and remaining ingredients into the bowl with the eggs.
- Step 5 Mix everything together and transfer to a 9X13 casserole dish.
- Step 6 Bake for 1 hour or until the eggs in the center are set and finished cooking.
- Step 7 Let cool for 5 minutes and serve.
