Braised Greens
These Braised Greens are beautiful, nutritious, and so very delicious. Perfect as a side dish to our Sweet and Spicy Glazed Salmon (linked below) or on its own, this is an amazing way to get more greens into your diet! To make this as a stand alone dish, you could add smoked sausage, vegan sausage, tofu, or chicken. This recipe calls for chicken stock but you could use vegetable stock for a vegan option. When it comes to picking what greens to add, use the more hearty tough greens like kale, mustard greens, collard greens and bok choy. In the image shown here we used kale and bok choy. Like all of our recipes, adapt to your needs and desires. This is so quick to make, it's bound to become your go-to side dish! Plus, Braised Greens just sounds fancy.
Ingredients
- 7 cups cleaned and roughly chopped greens
- 1 large shallot or yellow onion sliced into thin half moons
- 1 tsp olive oil
- 1/2 tsp minced garlic
- 1/2 cup reduced sodium chicken stock
- 1 tsp dijon mustard
- 1/8th tsp salt
- pinch of crushed red pepper
Directions
- Step 1 In a large skillet, heat oil over medium heat.
- Step 2 Once hot, add shallot. Cook until translucent.
- Step 3 Once cooked, add garlic and cook until fragrant. About 30 seconds to 1 minute.
- Step 4 After fragrant, add chopped greens. Toss greens into oil and shallot mixture. Cook 1-2 minutes.
- Step 5 In a small bowl, mix chicken stock, dijon mustard, salt, and crushed red pepper.
- Step 6 Add the chicken stock mixture to the greens and let simmer 2-3 minutes.
- Step 7 Cover with a lid and cook an additional 2-3 minutes.
- Step 8 Serve immediately or leave the lid on to preserve heat until ready to eat.
