Bean Salad

Filling and nutritious, this Bean Salad has no business being this delicious. Our recipe is super quick to toss together and extremely adaptable. We love serving this with tacos or quesadillas but I would be lying if I said I didn't eat this by itself as a meal, too! Another great option would be as a side dish to grilled fish or chicken. This Bean Salad has a bit a of kick with the addition of jalapeño, however, feel free to adjust the amount to fit your needs. Anyway, let's get our lean bean side dish party going!
Ingredients
- 1 can black beans- rinsed and drained
- 1can pinto beans-rinsed and drained
- 1 can kidney beans-rinsed and drained
- 1 jalapeno diced finely
- 1/4 cup freshly chopped cilantro
- 1/2 finely diced small red onion
- 1/2 cup diced cherry tomatoes
- 2 limes juiced
- 1/4 tsp ancho chili powder
- 1/2 tbsp minced garlic
- 1/2 tsp garlic powder
- 1/8 tsp cumin
- 1/4 tsp smoked paprika
- salt and pepper to taste
Directions
- Step 1 Toss all ingredients in a large bowl.
- Step 2 Refrigerate until cold or over night.
