Homemade Spaghetti is nostalgic and comforting. I don't know a single person who hasn't had a spaghetti of some sort in their lifetime. Originally, I started out using jarred spaghetti sauce (still do sometimes) and would jazz it up with various spices and herbs. I would be lying if I said that wasn't delicious in and of itself! However, once I started researching the ingredients that went into these sauces, I realized I could easily make a homemade version that tasted better AND was healthier. After many trial and error dinner nights (my poor husband), this recipe came to life. This easy and delicious Homemade Spaghetti dinner is going to bring you back to your childhood days- minus the chemicals and gross additives! If you're even half as excited as I am, you're already in the kitchen ready to go. So.... lets go!

Ingredients
  • 8 roma tomatoes
  • 6 garlic cloves minced
  • 1 small yellow onion-diced
  • 1tbsp olive oil
  • 1tsp salt
  • 1tsp garlic powder
  • 1/2 tsp onion powder
  • 1tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 Parmesan Reggiano rind
  • 1lb ground beef
  • 3/4 lb spaghetti noodles (3/4 box)
  • (optional) freshly grated parmesan and chopped flat leaf parsley for garnish
Directions
  • Step 1 Bring a large pot of water to a boil.
  • Step 2 With a knife, slice an X into the bottom of each tomato.
  • Step 3 Place tomatoes into the boiling water.
  • Step 4 Let boil for 2 minutes.
  • Step 5 Meanwhile, fill a separate bowl with ice water.
  • Step 6 After 2 minutes, transfer tomatoes into the ice water. Let rest 2 minutes.
  • Step 7 After 2 minutes, peel the skin off of the tomatoes. It is okay if some is left behind.
  • Step 8 Slice the tomatoes into small cubes.
  • Step 9 In a medium sized sauce pan, heat olive oil over medium heat.
  • Step 10 Add onion and cook until translucent.
  • Step 11 Add garlic and tomato paste. Cook 1-2 minutes.
  • Step 12 After 1-2 minutes, add remaining ingredients except beef and noodles.
  • Step 13 Stir and cook for 45 minutes. *Add water in 1/4 cup increments if you like thinner sauce.
  • Step 14 As the sauce is cooking, bring a large pot of water to a boil.
  • Step 15 Cook noodles in this pot according to package directions.
  • Step 16 Once sauce and noodles are finished, drain noodles, remove the parmesan rind from the sauce, and serve.
  • Step 17 Add freshly grated parmesan and flat leaf parsley for garnish.
