Loaded Ham and Potato Soup

This Loaded Ham and Potato Soup is just what you need for a comfortable night in. This recipe, like almost all of my recipes, is completely adaptable. You can use bacon instead of ham, milk or cream instead of sour cream, and whatever variety of potato your heart desires. You can also add leeks instead of onion and blend this into a creamy soup. The possibilities are endless! To make this recipe even easier, I use leftover ham from Easter or another dinner. Make this recipe your own and share it with me in the comments!
Ingredients
- 3 large russet potatoes diced
- 1 small yellow onion diced
- 1/3 cup butter
- 1/4 cup flour
- 32 oz chicken stock
- 2 cups water
- 2 cups diced ham
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- 1 tbsp dried parsley
- 1/4 cup room temperature sour cream
- 1/4 cup shredded cheddar cheese
- 4 strips cooked and crumbled bacon
- salt and pepper
Directions
- Step 1 In a large stock pot, melt your butter.
- Step 2 Add onion and a pinch of salt. Cook until softened.
- Step 3 Once softened, add flour. Mix thoroughly and cook 1-2 minutes.
- Step 4 Slowly pour chicken stock into the flour mixture while whisking vigorously.
- Step 5 Add water, ham, potatoes, garlic powder, onion powder and parsley.
- Step 6 Cook 45 minutes. Stir often.
- Step 7 Turn the heat off and add sour cream and cheese. Mix soup until incorporated.
- Step 8 Salt and pepper to taste.
- Step 9 Serve topped with sour cream, cheese and bacon.
