Sausage and Lentil Soup

Perfect for an easy weeknight dinner or potluck with friends, this Sausage and Lentil Soup is going to be everyones favorite. I like to use a hot sausage for our recipe but feel free to bring the heat down with a mild or sweet sausage. I also suggest using freshly grated parmesan. This gives the broth a lot of flavor that you will otherwise miss out on. I hope you enjoy this soup as much as we do. It's truly one of the best!
Ingredients
- 1 lb hot Italian sausage
- 1 small yellow onion diced
- 1 tbsp minced garlic
- 1 1/2 tsp fresh sage minced
- 6 large fresh sage leaves
- 2 tsp herbs de Provence
- 6 cups chicken stock
- 1 cup dry green lentils
- 1/2 cup finely grated parmesan
- 1 cup heavy cream
- 1 tbsp olive oil
Directions
- Step 1 In a dutch oven over medium heat, brown and crumble the Italian sausage.
- Step 2 Once finished, add the yellow onion and garlic. Sauté 1-2 minutes.
- Step 3 Add sage, herbs de Provence, and chicken stock. Simmer on high for 15-20 minutes.
- Step 4 Turn the heat to medium low and add the lentils. Simmer for 20 minutes.
- Step 5 Turn the heat off and add freshly grated cheese and heavy cream. Stir until cheese is fully melted and incorporated.
- Step 6 In a small skillet, heat olive oil over medium heat.
- Step 7 Once shimmering, add the sage leaves. Cook 30 seconds on one side and then flip. Cook another 30-45 seconds or until crispy.
- Step 8 Serve soup with crumbled sage on top.
